The Golden Ratio
For a balanced, rich flavor, start with:
2 tablespoons of ground brewing cacao
8 ounces of hot water (just off the boil, ideally around 200°F)
Brewing Methods
1. The French Press (Recommended)
This is the best way to capture the full body of the cacao without it becoming watery.
Add 2-3 tablespoons of cacao grounds to your press.
Pour in 8oz of hot water and stir gently to ensure all grounds are saturated.
Place the lid on but do not plunge yet. Let it steep for 5 to 10 minutes.
Give it one final stir to help the grounds settle, then slowly depress the plunger.
Pour Over
Note: Cacao percolates slower than coffee because of its natural oils.
Place a reusable mesh filter (standard paper filters can sometimes clog) into your dripper.
Add 2 tablespoons of grounds.
Slowly pour hot water in a circular motion.
Allow it to sit and steep for about 4–6 minutes while filtering through.
3. Stovetop Method (Teapot style)
Great for making larger batches or a deeper, darker brew.
Bring water to a light boil, take off heat add Cacao nibs and seep for 5 minutes or to desired strength.
Pour through a fine-mesh strainer into your mug.
Pro Tips for the Best Cup
Don't Rush the Steep: Unlike coffee, cacao doesn't get bitter if you leave it longer; it only gets richer.
Stirring is Key: Cacao needs a little "encouragement" to release its flavors. Stirring at the beginning and middle of the steep makes a big difference.
Customize Your Cup: Cacao is naturally unsweetened. Try adding a splash of coconut milk, a dash of cinnamon, or a teaspoon of honey to enhance the notes.
The Froth Factor: For a "ceremonial" feel, use a handheld frother after brewing to create a light, creamy foam on top.

Is brewing cacao the same as coffee?
While you brew it similarly to coffee (using a French press or pour-over), brewing cacao is 100% roasted and ground cacao beans. It has the aroma of dark chocolate but is sugar-free and contains theobromine for a gentle, jitter-free energy boost instead of high caffeine.
Can I eat cacao nibs raw?
Yes! Nibs are essentially "nature's chocolate chips". They are very crunchy and have a deep, unsweetened nutty flavor. They’re great as a snack or as a topper for yogurt, smoothies, and salads.
Do cacao nibs melt?
No, pure cacao nibs do not melt like chocolate chips because they still contain the fibrous bean structure. This makes them a perfect "crunchy" addition to baked goods like cookies and muffins.
Storage & Freshness
How long does brewing cacao stay fresh?

Should I keep my cacao in the fridge?
We generally do not recommend refrigeration. The moisture and odors in a fridge can cause the cacao to clump or pick up unwanted flavors. A dark, room-temperature pantry is best.
Can I freeze cacao nibs to last longer?
Yes, you can freeze them in a vacuum-sealed bag or airtight container. Just be sure to let the container reach room temperature before opening it to prevent condensation from forming on the nibs.
Quality & Appearance (The "White" Cacao)
Why does my cacao have white or gray streaks?
This is called fat bloom. It's a natural process where the healthy cocoa butter separates and rises to the surface due to temperature changes. It is not mold and is a sign of a pure, minimally processed product.
Is bloomed cacao safe to drink or eat?
Absolutely! Fat bloom is purely cosmetic. Once you add hot water for brewing or heat the nibs in a recipe, the fats will melt back in and the rich chocolate flavor will be exactly as intended.
How can I tell the difference between fat bloom and mold?
Fat bloom will feel waxy or smooth and will melt away if you rub it between your fingers. Mold will typically look fuzzy or "hairy" and often has a musty or off-putting smell.
