Sonoran Desert Yams!

At least once during the year I bake my family recipe yam casserole, one of my favorite family comfort foods that my mother brought to the table during the holidays.

Through the years I have changed the ingredients to fit my healthier adult lifestyle and am sharing this recipe with you in hope it ends up on your table at least once a year to share with family and friends.

Untamed Honeymallow Yam Casserole

Yam and Honeymallow Casserole

Sometimes the line between sweet and savory cooking is less well defined. If you have never tried a yam and honeymallow combo before you might be wondering when to serve this dish. Honeymallow and Yam Casserole is a savory dish that is a perfect side served at family and friends gatherings. The orange juice in this recipe helps balance the sweetness of the honeymallows and yams, an unusual recipe at first sight but you really have to try it to believe just how good it is.

Ingredients:
11 oz Vanilla Honeymallows
5 yams baked
½ cup Sonoran Desert Honey
½ cup organic butter
3 tbsp fresh orange juice
Zest of one orange
½ tsp cinnamon
½ tsp salt

Directions:

1. Preheat oven to 375 F then bake the yams wrapped in eco-friendly foil in the oven for 60 minutes, or until tender.
2. Peel the yams, dice and add with a spoon fold in the the organic butter, sea salt, organic cinnamon powder, organic orange juice, orange zest and honey.
3. Fill a casserole dish with the yams mixture and bake in the oven for 30 minutes remove from oven add the Honeymallows and put back in oven about 10 more minutes or until browned.
