Fair Trade Organic Peruvian Chocolate

It's that time of year! Valentine's Day is right around the corner, bringing flowers and chocolate to mind (and loved ones). That leads us to write about the chocolate that we use; Fair Trade, Organic, Peruvian Chocolate.

We have many of our customers ask, "What is fair trade?" Fair question! Fair Trade certification ensures that farmers receive a fair price, allows farmers to invest in techniques that bring out the flavors of the region, and strictly prohibits slave and child labor. We want our customers to feel good about their purchase and knowing that we use the highest quality ingredients and practices in our confections.

Peruvian chocolate has been prized for its taste and Peru's tropical climate and soil lend to perfect growing conditions with no need for chemicals.  We add Peruvian organic cocoa butter as an emulsifier instead of soy lecithin.  The cocoa butter helps the other ingredients blend together.  We use only 100% Peruvian dark chocolate, Peruvian organic cocoa butter, organic Uganda Gold vanilla (we make and sell our own), and Sonoran Desert wild flower honey to create our 72% dark chocolate.  We do not heat our chocolate over 115 degrees Fahrenheit because low heat helps retain important nutrients.

We create our chocolate confections in small batches to 72% dark chocolate.  Dark chocolate is known to improve heart health and brain function.  For the dark chocolate lover this is great news, and makes a great gift for your favorite sweetheart on Valentine's Day!
